Realistically it could be anything from an allergy (very rare) to meat contamination (food poisoning basically) but since it happens every time I would say it’s most likely food intolerance.
Meat intolerance isn’t really uncommon since Lactose Intolerance is considered meat intolerance (my fiance is lactose intolerant as an example) since there are some meats that contain lactose.
The best way to know which part of red meat you are intolerant to would be to go to a doctor and get properly tested. They would also be able to recommend treatment or ways to manage it better than some random they/them on Lemmy.
