I would make it so that everyone eating something with cilantro in it would experience how cilantro tastes to me.
Until someone is eating soap, then you can change it to taste like cilantro. One molecule later.

You can only change chemical composition to change flavor types. No other ways. And you can do so once per meal.
Replacing glucose or salt with glycoside amygdalin to make food… taste like bitter almonds would be an amazing super power.
